Abstract

Assessment of the acute use of handmade SCOBY-type kombuchas in children with and without trisomy 21, regarding possible changes in bowel function.

Experimental, observational and longitudinal study, carried out with 4 children who consumed artisanal kombucha for 20 days, two with T21 (4-year-old boy and 9-year-old girl) and two without T21 (6-year-old boy and 10-year-old girl) ).

The kombucha was produced following good food handling practices, with a single fermentation. The physicochemical and microbiological profile of kombucha was determined in a specialized laboratory. The participating families followed the fecal aspect of the children, following the Bristol scale.
